What should you do before you update to iOS 11? You must make a full backup so that you can downgrade whenever you want with the least data loss.

Alternatively, you can also backup iPhone using iOS Data Backup & Restore. In this case, after you’ve downgraded, you can use the same tool to selectively restore iPhone!
